- 500g very small fresh potatoes
- 1 tablespoon white wine vinegar
- 2 teaspoons Andaluz Olive Oil
- 1/2 cup finely chopped chives
- 15g pitted olives
- 1 tablespoon coarsely chopped toasted macadamia nuts
- 1 lettuce heart
- 80g cleaned watercress
Preparation
Boil the potatoes in a large pot of boiling water for about 10 minutes or until tender, then drain them thoroughly.
Peel the potatoes; mix them with vinegar, oil, chives, olives, and nuts in a large bowl.
For plating, place lettuce leaves on the plates before topping them with the potato salad and watercress.
