Healthy Recipe with Olive Oil #1: Potato Salad

Ingredients

  • 500g very small fresh potatoes
  • 1 tablespoon white wine vinegar
  • 2 teaspoons Andaluz Olive Oil
  • 1/2 cup finely chopped chives
  • 15g pitted olives
  • 1 tablespoon coarsely chopped toasted macadamia nuts
  • 1 lettuce heart
  • 80g cleaned watercress

Preparation

Boil the potatoes in a large pot of boiling water for about 10 minutes or until tender, then drain them thoroughly.

Peel the potatoes; mix them with vinegar, oil, chives, olives, and nuts in a large bowl.

For plating, place lettuce leaves on the plates before topping them with the potato salad and watercress.
